Indulge in Delight: Sparkling lemon Snowflakes

Finally, Minnesota decided to sprinkle a bit of winter magic on the last day of October – winter couldn't wait any longer, could it? With the cold weather and the impending doom of finals sneaking into November, fear not! We've discovered a simple cookie recipe from Taste of Home to add a dash of sparkle to these chilly days - behold, the Lemon Snowflakes!


These cookies will bring smiles to you, your friends, your family, and anyone whom you want to stay cozy with. Who wouldn’t enjoy a citrusy treat thinly coated with powdered sugar to remind them of winter’s beauty while adding a sparkle of summer? We get it, college life is a chaotic carnival, constantly on the go, but this treat is the ultimate savior – a 4-ingredient masterpiece that's both heartwarming and citrusy, making busy days a piece of (cookie) cake.

 

To make this delectable treat, you will need:


  1. 1 package lemon cake mix (regular size)

  2. 2-1/4 cups whipped topping

  3. 1 large egg, room temperature

  4. Confectioners' sugar

Quick and Easy Directions:

  1. Preheat oven to 350°

  2. In a large bowl, combine the cake mix, whipped topping, and egg until well blended. (Reminder: The batter might be very sticky)

  3. Drop by tablespoonfuls into confectioners' sugar; roll lightly to coat.

  4. Place on ungreased baking sheets. Bake until lightly browned and the tops are cracked, 10-12 minutes

  5. Remove to wire racks to cool

 

Of course, as creative college students, don’t forget to add some of your personal sparkles to give these cookies personality.

Here are some of our favorite substitutes:

  1. Add an extra ¼ to 1 tsp of lemon extract (depends on how citrusy you want it!)

  2. Super versatile recipe, can make it with dark chocolate mix, etc

  3. You can substitute whipped topping with home-made whipped cream, but not exactly at a 1:1 ratio (how to substitute)
